Greek Style Fish Finger Sandwich

A delicious Greek take on a classic! Crispy fish fingers are nestled in soft sourdough and layered with fresh Mediterranean flavours: creamy feta, tangy olive paste, with tomatoes, cucumber, lettuce and zesty spring onions.

Ingredients

  • 15g Cucumber

  • 15g Feta Cheese

  • 1 teaspoon Olive Oil

  • 20g Lettuce

  • 20g Spring Onion

  • 2 slices Sour Dough Bread

  • 3 Birds Eye Fish Fingers

  • 35g Beef Tomato

  • 5g Pine Nuts

  • 8g Black Olives

Instructions

  1. Cook fish fingers as per pack instructions

  2. Make olive paste by blending the olives, pine nuts and olive oil together

  3. Dice the cucumber, tomato and spring onion

  4. Slice the sour dough, spread with olive paste, layer salad on and top with fish fingers and feta cheese
